Spas (Armenian: Սպաս) is a matzoon-based soup.[1][2] It is a traditional dish in Armenia.[1][2] Besides matzoon, the main ingredient are hulled wheat berrys (i.e. with husks removed). It is served warm in the winter and chilled in the summer.[1][2]
Flour, and an egg or egg yolk is included, to prevent the matzoon from curdling.[3] Vegetables such as spinach and herbs (usually coriander, mint and parsley) are added as well. Butter and fried onions are also often added to the soup for a richer taste. It can also be served with meatballs.[4][5]
Traditionally there are 3 major variations. The first variation uses rice instead of wheat berry's, the second uses bulgur instead of what berry's, and the third uses barley instead of wheat berry's.[4]
