Chablis (pronounced [ʃabli]) is the northernmost Appellation d'origine contrôlée of the Burgundy region in France. Its cool climate produces wines with more acidity and less fruitiness than Chardonnay vines grown in warmer ones. These often have a "flinty" note, sometimes described as "goût de pierre à fusil" ("tasting of gunflint"), and sometimes as "steely". The Chablis AOC is required to use Chardonnay grapes solely.

The grapevines around the town of Chablis make a dry white wine renowned for the purity of its aroma and taste. In comparison with the white wines from the rest of Burgundy, Chablis wine has typically much less influence of oak. The amount of barrel maturation, if any, is a stylistic choice which varies widely among Chablis producers. Many Grand Cru and Premier Cru wines receive some maturation in oak barrels, but typically the time in barrel and the proportion of new barrels is much smaller than for white wines of Côte de Beaune. Barbaresco is an Italian wine made with the Nebbiolo grape. Barbaresco is produced in the Piedmont region in an area of the Langhe immediately to the east of Alba and specifically in the comunes of Barbaresco, Treiso and Neive plus that area of the frazione San Rocco Seno d'Elvio which was once part of the comune of Barbaresco and now belongs to the comune of Alba. It was granted Denominazione di origine controllata (DOC) status in 1966 and Denominazione di Origine Controllata e Garantita status in 1980. The wine is often compared with Barolo—another Nebbiolo-based wine from the Piedmont area. Though the wines do share many similarities, there are some distinct differences between them. Madeira is a fortified wine made on the Portuguese Madeira Islands, off the coast of Africa. Madeira is produced in a variety of styles ranging from dry wines which can be consumed on their own, as an apéritif, to sweet wines usually consumed with dessert. Cheaper cooking versions are often flavoured with salt and pepper for use in cooking, but these are not fit for consumption as a beverage.

The islands of Madeira have a long winemaking history, dating back to the Age of Exploration (approximately from the end of the 15th century) when Madeira was a standard port of call for ships heading to the New World or East Indies. To prevent the wine from spoiling, neutral grape spirits were added. On the long sea voyages, the wines would be exposed to excessive heat and movement which transformed the flavour of the wine. Jean-Louis Vignes (April 9, 1780 - January 17, 1862), also known as Don Luis del Aliso, was a French-born Californian vintner and ranchero. He was one of the first commercial wine makers in California and one of the first men to import and plant European Vitis vinifera grapes in the state. A skilled cooper by trade and an adventurer and entrepreneur by choice, he arrived in the Sandwich Islands on July 6, 1827. After losing his business in Honolulu due to Queen Ka'ahumanu's edict banning alcohol production, he sailed to California and landed at Pueblo de Los Angeles in 1831. Copia: The American Center for Wine, Food & the Arts was a non-profit museum and educational center in downtown Napa, California, dedicated to wine, food and the arts of American culture. The center, planned and largely funded by vintners Robert and Margrit Mondavi, was open from 2001 to 2008. The 78,632-square-foot (7,305.2 m²) museum had galleries, two theaters, classrooms, a demonstration kitchen, a restaurant, a rare book library, and a 3.5-acre (1.4 ha) vegetable and herb garden; there it hosted wine and food tasting programs, exhibitions, films, and concerts. The main and permanent exhibition of the museum, "Forks in the Road", explained the origins of cooking through to modern advances. The museum's establishment benefited the city of Napa and the development and gentrification of its downtown.

Copia hosted its opening celebration on November 18, 2001. Among other notable people, Julia Child helped fund the venture, which established a restaurant named Julia's Kitchen. Copia struggled to achieve its anticipated admissions, and had difficulty in repaying its debts. Proceeds from ticket sales, membership and donations attempted to support Copia's payoff of debt, educational programs and exhibitions, but eventually were not sufficient. After numerous changes to the museum to increase revenue, Copia closed on November 21, 2008. Its library was donated to Napa Valley College and its Julia Child cookware was sent to the National Museum of American History. The 12-acre (4.9 ha) property had been for sale since its closure; the Culinary Institute of America purchased the northern portion of the property in October 2015. Alcoholic beverages appear in the Hebrew Bible, after Noah planted a vineyard and became inebriated. In the New Testament, Jesus miraculously made copious amounts of wine at the wedding at Cana (John 2). Wine is the most common alcoholic beverage mentioned in biblical literature, where it is a source of symbolism, and was an important part of daily life in biblical times. Additionally, the inhabitants of ancient Israel drank beer and wines made from fruits other than grapes, and references to these appear in scripture. However, the alcohol content of ancient alcoholic beverages was significantly lower than modern alcoholic beverages. The low alcohol content was due to the limitations of fermentation and the nonexistence of distillation methods in the ancient world. Rabbinic teachers wrote acceptance criteria on consumability of ancient alcoholic beverages after significant dilution with water, and prohibited undiluted wine.

In the early 19th Century the Temperance Movement began. Evangelical Christians became prominent in this movement, and while previously almost all Christians had a much more relaxed attitude to alcohol, today many evangelical Christians abstain from alcohol. Bible verses would be intepreted in a way that encouraged abstinence, for example 1 Corinthians 10:21, which states, "You cannot drink the cup of the Lord and the cup of demons too..." The influence of wine in ancient Greece helped ancient Greece trade with neighboring countries and regions. Many mannerisms and cultural aspects were associated with wine. It led to great change in Ancient Greece as well.
The ancient Greeks pioneered new methods of viticulture and wine production that they shared with early winemaking communities in what are now France, Italy, Austria and Russia, as well as others, through trade and colonization. Warren Winiarski (born 1928) is a Napa Valley winemaker and the founder and former proprietor of Stag's Leap Wine Cellars.

Winiarski owns and operates Arcadia Vineyards in the Coombsville AVA of Napa Valley, which produces Chardonnay, Cabernet Sauvignon and Merlot. In 1976, Winiarski won the Judgment of Paris blind tasting for his 1973 Stag's Leap Wine Cellars Cabernet Sauvignon. He oversees the Winiarski Family Foundation, which supports educational and charitable causes, in addition to teaching courses at the St. John's College Summer Classics program in Santa Fe, New Mexico. In 2017, Winiarski was inducted into the 11th class of the California Hall of Fame by Governor Edmund G. Brown Jr. for his global efforts to showcase and preserve the quality and history of California wine. John Adlum (April 29, 1759 – March 14, 1836) was a pioneering American viticulturalist who was the first to cultivate the Catawba grape. He is known as "the father of American viticulture" (grape-growing). He also served in the American Revolutionary War; was a well-known surveyor; was one of the first associate judges in Lycoming County, Pennsylvania; and served in the United States Army in the War of 1812. Bombino bianco is a white Italian wine grape variety planted primarily along Italy's Adriatic coast line, most notably in Apulia. The vine is prone to high yields and often produces neutral flavor wines. The grape is known under many synonyms throughout Italy including Debit and Pagadebit, names which came from the grape's reputation for being a high yielding and reliable crop for vineyard owners to grow that would assure them that on each vintage they could pay off their debts.

The exact origins of the grape are unknown, with early wine texts speculating that the grape may have originated in Spain. Today most ampelographers believe that the grape is indigenous to southern Italy, with Apulia believed to be the most likely home of the grape. In the 20th century DNA profiling has shown that while Bombino bianco is closely related to Bombino nero, the grape is not color mutation but its own distinct variety. Though Bombino bianco shares many synonyms with Trebbiano Toscano (also known as Ugni blanc), the two grapes are unrelated. DNA research has also shown that Bombino bianco may be one of the parent varieties of the Impigno grape of the Ostuni DOC in Apulia and of the Moscatello Selvatico grape that is also native to the same region. Muscadet (UK: /ˈmʌskədeɪ, ˈmʊsk-/ MU(U)SK-ə-day, US: /ˌmʌskəˈdeɪ, ˌmʊsk-/ MU(U)SK-ə-DAY, French: [myskadɛ] ^ⓘ) is a French white wine. It is made at the western end of the Loire Valley, near the city of Nantes in the Pays de la Loire region. It is made from the Melon de Bourgogne grape, often referred to simply as melon. While most appellation d'origine contrôlée wines are named after their growing region, or in Alsace after their variety, the name Muscadet refers to an alleged characteristic of the wine produced by the melon grape variety: vin qui a un goût musqué (wine with a musk-like taste). However, according to wine expert Tom Stevenson, Muscadet wines do not have much, if any, muskiness or Muscat-like flavors or aromas.

The sole variety used to produce Muscadet, Melon de Bourgogne, was initially planted in the region sometime in or before the 17th century. It became dominant after a hard freeze in 1709 killed most of the region's vines. Dutch traders, who were major actors in the French wine trade, encouraged the planting of this variety; they distilled much of the wine produced into eau de vie for sale in Northern Europe. A rosé (French: [ʁoze]) is a type of wine that incorporates some of the color from the grape skins, but not enough to qualify it as a red wine. It may be the oldest known type of wine, as it is the most straightforward to make with the skin contact method. The pink color can range from a pale "onionskin" orange to a vivid near-purple, depending on the grape varieties used and winemaking techniques. Usually, the wine is labelled rosé in French, Portuguese, and English-speaking countries, rosado in Spanish, or rosato in Italian.

There are three major ways to produce rosé wine: skin contact, saignée, and blending. Rosé wines can be made still, semi-sparkling or sparkling and with a wide range of sweetness levels from highly dry Provençal rosé to sweet White Zinfandels and blushes. A wine fault is a sensory-associated (organoleptic) characteristic of a wine that is unpleasant, and may include elements of taste, smell, or appearance, elements that may arise from a "chemical or a microbial origin", where particular sensory experiences (e.g., an off-odor) might arise from more than one wine fault. Wine faults may result from poor winemaking practices or storage conditions that lead to wine spoilage.^{[citation needed]}
In the case of a chemical origin, many compounds causing wine faults are already naturally present in wine, but at insufficient concentrations to be of issue, and in fact may impart positive characters to the wine; however, when the concentration of such compounds exceed a sensory threshold, they replace or obscure desirable flavors and aromas that the winemaker wants the wine to express. Wine Country is the region of California, in the northern San Francisco Bay Area, known worldwide as a premier wine-growing region. The region is famed for its wineries, its cuisine, Michelin star restaurants, boutique hotels, luxury resorts, historic architecture, and culture. Viticulture and wine-making have been practiced in the region since the Spanish missionaries from Mission San Francisco Solano established the first vineyards in 1812.

There are over 1700 wineries in the North Bay, (according to Alcoholic Beverage Control of California), mostly located in the area's valleys, including Napa Valley in Napa County, and the Sonoma Valley, Alexander Valley, Dry Creek Valley, Bennett Valley, and Russian River Valley in Sonoma County. Wine grapes are also grown at higher elevations, such as Atlas Peak and Mount Veeder AVAs. Cities and towns associated with the Wine Country include Santa Rosa, Healdsburg, Sonoma, Kenwood, Petaluma, Sebastopol, Guerneville, Windsor, Geyserville, and Cloverdale in Sonoma County; Napa, Yountville, Rutherford, St. Helena and Calistoga in Napa County; and Hopland and Ukiah in Mendocino County.
